whites have a longer shelf life than yolks. you can keep them in the fridge overnight for several nights.

I think there's a kabbalistic thing about not leaving raw eggs, onion or potato overnight...? Anyone?

IIRC If you sprinkle with salt or leave a piece of egg shell then it's fine. I know that opened eggs and cut up onion is an issue but never heard about potato being a problem.

That I know about I'll add a pinch of salt then it's fine. (According to my father)

Yes, you can.
I prepare my egg whites for kugel in a covered container Thursday night. I just add a sprinkle of salt for halachic reasons and leave it in the fridge until I am ready to use on Friday.

You might want to add a pinch of sugar instead of salt then.
