After reading lots of old posts about tips to make my challah recipe fluffier, I've decided that my recipe may have too much flour in it. But:
My recipe calls for 5 lb of flour (to make a bracha). So if I decide to cut down on the flour this week, I won't be able to make a bracha. What do you suggest?
Try an entire new recipe?

use high gluten flour instead of regular flour ... your challah will come out fluffy
