Recipes for a vegetarian that can't eat eggs?

Pretty much as the title says - Ill be cooking this whole week plus shabbos for a vegetarian that can not eat eggs - Please share your successful recipes...and side note - they dont eat fish either :S

I have:
Stuffed mushroom/zucchini/pepper/aubergine
Lasagne
Salads
bean stews
Lentil/barley bakes
...

Split pea soup
Sweet and sour lentils
Macaroni and cheese
Baked ziti
Tofu stir fry
Quinoa with veggies and parmasean ( or quinoa fritters with marina sauce)
Pizza
Greek salad
Tacos or burritos with referee beans or soy beef

Go on Pinterest and search by "Vegan". You'll be amazed at all the possibilities.

I find just searching random recipes to be uninspiring, but for some reason those pretty pictures really get to me. Very Happy

You should double check on the dairy because it sounds like they may be vegan.

As for Pinterest - I do often search the web but I prefer recipes that can be vouched for! the pictures are great though Wink and im sure ill be checking there too...

By definition, a vegetarian does not eat fish. If a person eats fish but no meat they are a pescatarian not a vegetarian.

Side dishes like sweet potatoes and butternut squash haven't been mentioned yet. Zucchini parcels are also an idea and look pretty presentable.

Yes but do be mindful that vegetarians eat dairy products which would be excluded by vegan recipes.

Sweet and Sour Lentils
Serves 6-8

1⁄4 cup soy sauce

1 bay leaf

3 Tbs. onion powder (granulated onion)

3⁄4 cup vegetable oil

3⁄4 cup honey, or to taste

1⁄2 cup red wine vinegar

1 tsp. ground allspice

1⁄2 tsp. powdered ginger

4 cups water

3 cups lentils, picked over and rinsed

1⁄4 cup chopped parsley ( optional for garnish)

Put soy sauce, bay leaf, onion powder, oil, honey, vinegar, allspice, ginger and water in 4-qt. pot. Mix. Add lentils. Bring to a boil. Stir. Cover and lower heat. Simmer for 11⁄4 to 11⁄2 hours, adding water if necessary, until lentils are tender but not mushy. Turn heat off and leave pot covered for 15 minutes. Uncover, remove bay leaf and stir. Serve hot, warm or at room temperature garnished with parsley.

I would say it serves 10-12 and it does freeze well.

Vegan recipes are great for eggless cooking and baking. If you're using dairy, it's even easier, because you don't have to go running out to find rice milk and soy yogurt and coconut cream- you can just substitute the dairy ingredients back in.

Couscous stew with chickpeas is a good vegan meal- basically a vegetable soup/stew with chickpeas, onion, garlic, carrots, celery (with the leaves), green cabbage, pumpkin or butternut squash and appropriate spicing. Ladle over couscous to serve.
