Eggplant Rolitini

Slice eggplant lengthwise into 1/2 inch thick slices and sprinkle both sides with kosher salt; sweat for 20 to 30 minutes and then pat dry.
Arrange eggplant on greased cookie sheet and brush with olive oil; bake at 400 for 10 minutes.
Place 2 heaping tablespoons of cheese filling on one end of each eggplant slice. Roll into a tube and secure with a toothpick.
Spread baking dish with a thin layer of marinara sauce and top with rolitini. Spoon more sauce on top and sprinkle with some shredded cheese.
Bake until lightly browned and bubbly. Remove picks and serve.

Zucchini has a lot of liquid so it would get soggy.

how do you make the cauliflower rice? can u use the frozen bags? what is the method?

15 salted roasted almonds a nice snack.
Greek yogurt with a tablespoon of Pesach granola.
Fudge bombs are lower in fat and carbs than some other recipes. Uses cocoa, egg whites, confectioners sugar, chocolate chips.
You can buy Pesach cake mix and try mixing in a can of soda instead of the recommended ingredients and baking as many do during the year.

Yes, you can use frozen cauliflower but fresh is even better.

Re poached pears, my friend gave me her late mother's recipe: peel pears, put in a pot, and cover at least halfway with red wine (or mixture of wine and grape juice). Very yomtovdik, easy as anything and absolutely delicious.
