Broccoli in garlic sauce, roasted baby potatoes, carrot souffle, orzo, couscous, qioinoa, rice and wild rice pilaf,asparagus, butternut squash fries, green beans, stuffed mushrooms, kasha varnishkas,sweet potato pie or sweet potato and broccoli in puff pastry,any type of fruit crisp, pumpkin muffins, tri color vegetable kugel,zucchini or cauliflower or onion kugel.
I could think of more if you need ....

How about a soup? A fresh green salad? Roasted green beans? Corn salad? Squash kugel or sweet potatoes instead of potato kugel?

I'm doing a chicken soup with Lukshen and matzah balls

string beans with soy sauce. if frozen -
put frozen string beans in a frying pan over flame (witha drop of oil) once slightly defrosted, season with all spices and pour soy sauce
sprpinkle with seasame seeds

Sweet potatoes cubed, tossed with olive oil, sprinkled with salt and thyme and baked in the oven covered for a couple of hours....
Broccoli craisin salad
Vegetable turnovers
Roasted veggies such as , eggplant, red pepper, garlic and zuchinni (you can omit zuchinni since you already have that)
Orzo and sauteed veggies
Small bowtie noodles with sauteed cabbage
