Just got panini maker and would like to use for supper tonight. I have baguettes anyone have any good recipe or ideas? Thanks!

Fattening Alert:
Cut open the baguette, scoop out a liitle bit to form a cavity to fill with toppings.
Smear with cream cheese, add sliced peppers, olives, diced tomatoes, any veggie
Top with marinara sauce and shredded cheese.
Butter the Outside of the bagguette to keep it from burning while the inside cooks
Continue buttering as necessary
Enjoy

Smear butter on the outside of the baguette. Put inside freshly sliced mozzarella cheese, beets, freshly and thinly sliced garlic, a little bit of sliced red onions and fresh cilantro. Drizzle inside the sandwich a tiny bit of maple syrup.

Adding pesto inside will give it a nice flavor. I.e. smear pesto on inside of baguette, add grilled veggies, and sprinkle with mozzarella cheese. Yum!
You can put a sliced veggie burger inside too for added protein and to make it more filling.

Both of these can be healthy if using WW bread and low fat cheese.
Eggplant Parm: Peel eggplant and slice thin. Bread the eggplant (optional). Bake. (or buy pre-ready eggplant slices)
In panin maker: bread, sauce, cheese, eggplant, bread
Avocado grilled cheese:
Bread
Avocado mashed with lemon juice and salt and pepper
Garlic and mayo, lemon juice salt dressing
Sliced tomato
Slice cheese
Bread

We love our panini maker! Stock up on stuff like cheess, hot pepper, tomatoes, eggplant, olives, peppers, zuccini...... Everyone puts in whatever they like.
