ISO fail-proof cake recipe w/o that dry starchy looking top

Todays cakes all have that cracked potato starchy dry looking top, and one also had a paper thin paper-tasting disgusting bottom.

Which are fail-proof cake recipes that yield moist looking cakes?

Any other sponge type cakes or nut cakes or bars? Those cracked dry tops Im getting today are nauseating me.

The traditional shehakol freezer cake has a crackly top but it's due to starch content because the cake has no starch.

Yes. I use lemon juice instead of vinegar in the recipe and make my own frosting using oil instead of marg (sometimes I just skip frosting altogether).
