Todays cakes all have that cracked potato starchy dry looking top, and one also had a paper thin paper-tasting disgusting bottom.
Which are fail-proof cake recipes that yield moist looking cakes?

Yes. I use lemon juice instead of vinegar in the recipe and make my own frosting using oil instead of marg (sometimes I just skip frosting altogether).
