we can help, but it would be a good idea to post what kind of kitchen equipment you have. it'll be easier to give you useful recipes.

Should I tell you what my family likes to eat or what your family likes to eat?

You have a stovetop? Oven? Griddle ? Youre talking beef, chicken ? Dairy?
An example of a meal I served;
Baked salmon with lemon slice and guacamole
Cream of chicken soup with floating diced chicken
Beef neck bones, mashed potatoes with crispy onions, sweet potato chips for color,
A salad with cubed mango, romaine lettuce, candied almonds and a dressing of salt, pepper, sugar, lemon and oil.
Dessert was apple compote with a scoop of sorbet.

Do you have an oven to use the tinfoil pans in?
Are there any foods or products that you don't use on Pesach like spices, peels, garlic or otherwise?
How many people are you cooking for and what do you usually serve year round on shabbos and yom tov?

Bake and roast as much as you can so it's quick and simple but yummy too.
For Thursday night you can do a nice roast chicken with cubed potatoes and various colorful vegetables for your main dish.
For Friday night you can do a slow baked roast beef, baby red potatoes (I make stove top so it reheats better for second day) and two toned summer squash and tomatoes.
