Actually we do eat gebroks, but help me out, Imamothers! I need a potato side dish and DS#2 has had enough of mashed potatoes, baked potatoes, kugel and cottage fries.

Sweet potato hash, two toned potato salad
Parsley baby red potatoes, roasted fingering potatoes
Quinoa salad, parsnip puree
Cauliflower rice, spaghetti squash salad or kugel

For gebrokts, I saw a nice looking savory matzah kugel recipe, I make gnocchi sometimes, someone here posted a nice matzah cutlet recipe with mushroom sauce.

Roast carrots, onions, sweet potatoes and beets. Coat with olive oil, a little salt and roast at 450 until done. Stir or shake a couple of times while cooking.

boil potatoes in cubes making sure not to get mushy

boil peeled, diced beets

mix together, add some olive oil, scallions or onions, garlic, squeeze of lemon, salt, black pepper, garlic powder

[you can use beet juice for borscht]
