hi,
I need ideas for what to take to work for lunch (we have a milchig and fleishig microwave)
something quick to make that will keep me satisfied till supper time.
I am a very picky eater so kind of stuck on choice of 2 salads, baked ziti, and vegatable soup.
I'm getting really bored already...

Do you like salmon, steamed vegetables?
Cheesey scrambled eggs on an English muffin?
Cold cut, sliced egg or tuna sandwiches?
Eggplant parmesan?
Meatballs and spaghetti?

OMG you sound like me. I am really picky. I try to make extra of whatever I am making for supper and take it the next day for lunch. Otherwise I take a salad.

Same here. I pack leftovers from the night before. I don't even have the luxury of a microwave, so it has to be something I'm happy to eat cold, too.
Every now and then I treat myself to felafel, but I get bored with that, too (plus the extra expense, which I feel guilty about.)

I am not a picky eater so can't relate to that one:
How about quinoa? Quinoa Greek salad or quinoa kale salad are yummy and healthy.

I do pack leftovers very often... but I still go to my mom for supper a few times a week so on those days I don't have what to take... - and not every day's supper is a good lunch..

I used to hate quinoa but I have come to like it if it has lots of flavorings or mix ins.
I take grain salads like pasta, farro, quinoa with feta and roasted veggies
Cheese and crackers
Overnight Oats
Yogurt but has to have 2x as many toppings as yogurt
Any dinner leftovers

I also get picky, I like chicken and such so it is easier but we only have one microwave. And I also get so nauseous for some reason from leftovers.
I often end up buying sushi or takeout and it is $$$ . Crazy.
How about tuna do you like tuna?
Grilled cutlets salad (grilled cutlets with lettuce, tomatoes, red onion and corn with any dressing)
Grilled cutlets heated in the microwave with couscous etc.
Tomato rice (mix tomatoes, can or fresh, with cooked rice, add some cheese if you like and heat).
couscous salad
make your own vegetable sushi (sweet potatoes, fake crab, cucumber, mango etc).

"Everything Muffins"
One box of cake mix, make the batter as usual, and use an extra large bowl. Spice cake is the best, but vanilla cake will do in a pinch. Duncan Hines is parve, and in the US you can find it on sale for 99 cents a box.
Add: 1 cup of quick cook oats
and any combination of:
flax meal
chia seeds
chopped nuts
dried fruits
wheat germ
granola
corn flakes
shredded carrot
shredded zuccini
apple sauce
mashed banana
or whatever you have that sounds good to you. If you really want to push the protein content, you can even add finely crumbled tofu.
Really pack it in. The cake mix is just there to hold everything together. Spoon into muffin tins and cook until a toothpick comes out clean.
I make variations on this all the time, and my family inhales them!
