I've had it grated and served as a slaw, instead of cabbage.
Also julienned with apple and made into a Waldorf-type salad.
I put it in a chunky vegetable soups and also sometimes in chicken soup.

I make a yummy Waldorf type salad
Don't have measurements though

Cubed kohlrabi
Sliced celery
Cashews
Mayo
Lemon juice
A pinch of salt
A pinch of sweetener of choice

I've also used it to make low carb hash browns
Cubed kohlrabi
Sautéed in a little oil with lots of paprika and any spices you like

In Israel
They julianned it and serve it with Israeli pickles, red pepper, and tehina
This was very yummy.

How did you end up with a case? Add them to vegetable soup, chicken soup, marinared salad, cut them up and eat them plain.

Okay so this post is from a year ago- the way I've done it is cut them up like potatoes.
Add some water to the pot with some sliced onion. I add some spices and basically keep mixing it for an hour.
How woulf you recommend doing it? My recipe takes too much babying- and I actually haven't made it for a while.

I haven't made hash browns with kohlrabi but done it with sweet potato. I boil cubes until al dente (not fully tender). Blot dry. Then sear and brown in skillet.

You can try this one with shredded kohlrabi.

I had some after Pesach which I just peeled and cut into chunks. It made for the most delicious low-cal snack (especially important for the post-holiday diet).
