It is not hard to make--just do the same thing as a regular recipe but with gluten free cookies smashed up with butter for the crust. It tastes exactly the same.

I just skip the crust. Spray the pie pan with PAM and pour the cheese mixture right in. It's sort of like "Cheese Snack"

I have substituted ground almonds mixed with a little oil and a sprinkle of splenda for a diet cheesecake ~ you would have to ask marina if it was worth it

On Pesach my family makes a recipe for cheesecake with finger ladies as the crust. It's delicious!!!!
