You can use rice noodles if you want gluten free. Frankly, it's not really lasagna without some kind of noodle in it.
Otherwise, you can just layer eggplant, zucchini, onions, and tomatoes alternating with sauce and assorted cheeses, and bake. Without the starch of the noodles, it may fall apart when you try to serve it, and won't be as pretty.

with eggplant? Like eggplant parm?
On pesach I layer 'pesach crumbs' with eggplant sauce and cheese. keep layering until finish all. Cover top layer of eggplant with crumbs.
Bake covered 1 hour.
Pour ontop tomato sauce, oil and sugar and bake uncovered.
