Ugh. I am so irritated. Discovered my oven wasn't working right when I was trying to bake challah. Challah is ruined.
Anyone have any simple recipes for the stove?

I do baked ziti in a pot without baking it. My kids hate when pieces get hard.
I also had a prob with my oven. It was taking close to 3 hours to bake my kugel It still looked half raw. I shut the oven and then turned it on again and it worked fine! Maybe you will have such luck!
Plenty of chicken recipes - stove top.
Latkes - all types - cheese, tuna, potato - soups, steamed broccoli (w/ melted muenste cheese)...
If you have a toaster oven there are things you can bake in it.

Quinoa with sauteed onions and mushrooms
Fruit puree for dessert
Tofu stir fry with vegetables

I'm doing the salmon and the veggie lasagna in the milchig toaster oven, and making lots of salads for variety.
For hamotzi I'm doing individual size challah rolls, using milk and butter instead of water and oil, and mixing in chocolate chips. It's going to be SO decadent!

Halachically I think you are required to shape the challah rolls have an atypical form, unlike parve rolls. Dairy bread that looks like parve bread is forbidden. Maybe ask your LOR for clarification.

Salmon or other fish stove top. Soups. Salads and dips with no oven. Fettuccine alfredo, penne a la vodka, crustless spinach quiche, vegetable linguine, Greek orzo or quinoa, sautéed asparagus or other vegetables. Fried eggplant parmesan (if eggplant and marinara are assembled hot, the cheese will melt automatically.) Roast beef, corned beef, chicken curry. No bake cheesecakes and truffles. Various frozen pies.

The issue AFAIK (I looked into it years ago) is with any bread, and with it not being pareve. (I.e. fleishik is also problematic.) AYLOR because the chocolate chips might give it a distinctive enough look- pizza is ok because it's plainly not "regular" bread.

You can do grilled cheese , smear butter on the outside of two slices of bread and a slice of American cheese in the middle of it...put it in a skillet and cover the skillet until the bottom is browned than turn over until the other side is browned and cheese is melted...this happens fast and can burn quickly , need to be on top of it. , You can serve that with veggie and melted cheese omelets. (it may not be gourmet, but definitely tastes delish...though it all has to be made right before the meal.
