with your name as 'gourmetbaker' I think we should be asking your baking advice ...
to me flour is flour ... it's how you work with it
unless you are getting into breads which then there are high gluten flours and whole wheat flours and all sorts of other flours depending on what you wish as your end result ...

somebody told me to start using the vacuum packed flour I wonder if the freshness really makes a difference in the taste.

I'm partial to King Arthur for whole wheat, as it's finer than national brands and the bran doesn't all end up in my sifter. One of the heimish brands is similar but to my sorrow I don't recall which brand it was. It may have been Glick's but don't quote me.
