saute large onion
prepare cutlets in to thin pieces
put cutlets into a pan
cover cutlets with sauteed onions on top
pour a very generous amount of duck sauce over chicken & onions
cover lightly w/ foil and bake at 350 for around 40-45 minutes
chicken pieces will stick together when baked so gently cut apart with fork.
This tastes great over rice or even in a roll as a sandwich.

here's a take off on regular breaded fried shnitzel -
mix an egg, 1/4 c flour and 1/4 c duck sauce.
Dip shnitzel into the mixture and then into bread/corn flake crumbs (I season the crumbs).
