My kids have an interesting preference: they like to eat the side of the sandwich cookie with the cream lol. So there are times that I allow them, and then I'm left with a bunch of the sides without the cream and I usually toss it. (Obviously it's clean since I break it!)
Any idea how to use them? Cookie recipe, dessert, etc...

Crumble them and use as an ice cream topping.
Or fold them into homemade ice cream.
