Husband is extremely picky eater...what should I make?

These are the things my husband dislikes:
Rice
Pasta
Farfel
Quinoa
Mashed Potatoes
Cooked/ Roasted Veggies...

So basically the side dishes I am left with is
Baked Potatoes
Roasted Potatoes
Potato Kugel
Other potato variation
Onion Rings (for a change)

He also does not like any soup (except for onion soup and chicken soup)

He won't eat most salads, sticking to Israeli Salad and Coleslaw.

A little bit at my wit's end trying to come up with different suppers. Any ideas?

Come up with 6 easy varieties of potato that he likes and serve that to him.
Don't neglect yourself. Make other easy side dishes for yourself and enjoy variety.

Hasselback potatoes
French fries, curly fries, tater tots (but frozen and bake so you can get a break for catering each night)
Potato salad
Hash Browns
Roasted potato wedges
Herb roasted baby red potatoes
Fingerling potatoes
Barbecue spiced diced potatoes
Dijon, or honey, or barbecue or other sauce roasted potatoes
Portobello stuffed potatoes

A good rice dish can be make and served for 2-3 days for yourself. Can even be made quickly and simply in the oven. Pasta too can be served for a few days and seasoned differently each day. When you roast potatoes make sure to roast sweet potatoes for yourself in same pan. Farfel can be made and frozen in individual servings for reheating.

Au gratin potatoes
Twice baked potatoes
Stuffed potato skins with sauce n cheese so it's like pizza

Or just make him mashed potatoes and eat a diff side dish yourself

What proteins does he like?
Chicken, fish, eggs, beef, beans, cheese?
Any veggies?
String bean, brocolli, cauliflower, zucchini, pumpkin,asparagus?

stick to what he likes ... especially if he won't otherwise eat

sweet potato fries
red potatoes baked with rosemary, fresh garlic & olive oil

Is he open to trying new foods or he is stubborn about it? Most people I know like butternut squash soup. Will he eat quiche? If you add hearts of palm, chopped bell pepper, or avacado to the salad would he eat it?

Sure, Emunah. Wash the potato skins well, slice the long way down the potato and bake or microwave with the skin on. You can put on a bit of butter or oil to keep the flesh moist. For the microwave, wrap in plastic wrap, but don't forget to poke holes for steam.
Once the flesh is soft, cool and scoop out most of the potato. Put in marinara sauce, sprinkle with shredded cheese and broil until the cheese melts and browns a bit.
My kids loved it!
Save the scooped out potatoes to use for mashed potatoes.

Thanks for all the replies!
There are a lot of great potato ideas here, which I will definitely use.
I'm just wondering if there are any other sides out there that don't involve potatoes and haven't yet been crossed of the list.
I really enjoy cooking, so sometimes I'll make a separate side for myself that I enjoy (like roasted veggies) and serve Hubby what he like, but it would be simpler if we could both eat the same.

Yesterday I made eggrolls, and those were a hit, so I will now add that to my roster. He also mentioned that he likes grilled kishke, so now we have 2 more!

Any more ideas are always appreciated!

He's open to trying, but will tell me afterwards if he liked it or not, so I know whether or not I should make it again.
Butternut squash soup was not received well.
I once made a few different quiches- onion, vegetable and broccoli. The only one he sort of liked was the vegetable one.
Avocado is a good idea, since he does like guac, so maybe I'll use it to change things us a bit.

He likes meat (like all men) but we're on a budget, so that's a rare treat.

We regularly eat schnitzel, chicken cutlets, chicken...

He only like salmon fish, but I find fresh salmon is almost as expensive as meat!

I'm sorry but barring medically diagnosed allergies and food intolerance I have very little sympathy for picky eaters, especially adult ones. Cook whatever you like and think are good, economical and healthy. If he doesn't like it, let him cook.

Also, any ideas for milchigs that do not involve pasta? Eggplant parmesan is good, I've made it before, and he'll tolerate baked ziti, but since he doesn't like pasta, it's not ideal.
I'm getting nervous for the 9 days.

Truthfully, I feel the same way. In my house, picky eating was never tolerated. But I'm trying to be a good wife here, so I will accommodate.
