I have a small (2 1/4 lb) french roast. Looking for a yummy recipe, nothing overly sweet please

One of the best roasts I've ever had is made by just opening a jar of Italian Dressing and dumping a whole bottle onto the roast. Then roast, covered tight, for several hours. The flavor of the Italian spices is wonderful.
