Freezing veggies?

Novice freezer here...

I need to freeze an entire Shabbat.
What veggies freeze well? I usually do green beans, broccoli, stir fry (carrots, peppers, broccoli), or roasted veggies (eggplant, peppers, zucchini, onions).
The broccoli and green beans are frozen...will they refreeze well once cooked?
Is it better to make a dish that incorporates veggies like rice with roasted veggies? Does that protect them better?
Or am I just stuck making a veggie kugel (not really my thing but I'll survive)?

Make a vegetable kugel that has a starch binder in it. Or just heat the frozen broccoli and green beans straight from the bag in the oven or the plata for shabbos. Do not cook / defrost first.
