From my mother:
Spinach quiche
1 onion, diced
1 package frozen spinach, defrosted
4 whole eggs plus 2 whites
1 1/2 cups milk
1/2 cup flour
1 8 oz package of shredded cheese (I like a mix of mozzarella and cheddar)
1 tsp salt
pepper to taste
Sprinkle of dry mustard or other spices to taste (I like to add onion powder and garlic powder)
1 frozen deep dish pie crust
Oat bran
Instructions:
Preheat oven to 350° F.
Sauté the onion in a little oil until golden. Add the spinach until warmed through and not liquidy. Season with S&P, onion powder, garlic powder or whatever spices you like.
While the vegetable mixture is sauteing, prepare the quiche base in a bowl. Combine the eggs, milk, flour, and spices and mix with an immersion blender to avoid lumps. Add in the cheese. Once the veggies are done, add them to the bowl and mix.
Transfer the frozen pie crust to a greased pie pan. Sprinkle some oat bran on the bottom. Carefully spoon the quiche mixture into the pan.
Bake uncovered for approximately 50 minutes.
Notes: You can make this recipe with any vegetables that sauté well and are not too liquidy.
I find that this recipe makes a little too much quiche batter for 1 pie crust, so I put the extra in a little ramekin to make a crustless quiche for someone's lunch.

Pastry : 4 oz margarine 8 oz flour and 4-6 tbsp water to make a dough.
Bake blind.
Put on the pastry corn, and/or mushrooms, tomatoes, squash.
In a bowl mix 2 eggs, 1.5 cups milk, salt and pepper
Pour over pastry and sprinkle with grated cheese.
Bake on 400F for 20 mins/until cheese is browned.
