The irony! I posted about how to stretch a roast just 2 weeks ago, and here I am asking what to do with the leftovers! I had plenty of food, and have been left with a few generous slices of pot roast which I froze.
They meat is quite soft, it still keeps its shape but is easy to cut and delicious.
Can I do something with them for shabbos lunch? Some kind of beefy salad or just serve the heat up the slices dry/serve them cold?
The only beef I've seen served cold is the type that's still rare in the middle.
Or could I use them in a cholent even though they are already cooked?

Our favorite way to stretch steak is to make tacos/fajitas. Get a bunch of veggies (we like tomatoes and avocados, but peppers and onions are also quite tasty), some salsa(s) tortillas or taco shells and let everyone put together what they like.

You could make a quick veggie soup, and then once it's done add the chopped meat at the last minute, just to heat it through.

Is it enough for everyone.
I keep just the sauce on the blech.
I take the roast out shabbos morning so it's room temp.
I serve it with the very hot sauce.

Hot beef sandwiches are a classic. You slice the meat on bread and pour gravy over it. Also classic for turkey leftovers. Would be delish with challah.

ditto ... or even cold if you made it right
plus I don't use a blech
