What type of peppers? You can roast Shisito peppers. Jalapeño can be roasted or added to a soup/ sauce/ etc or guacamole

As tichellady posted, yiu need to be specific as to the kind of peppers.
Also what kind of cuisine do yu like. I have a fantastic Schezuan eggplant stir fry but maybe you like Mexican or Thai. Or yiu want to make jerk chicken with up scotch peppers. 😱

What do they look like? That would provide a clue. To some extent, doesn't make that much if a difference if yu are just dicing.
FWIW, the heat is contained in the seeds and the white interior pith. If you remove those parts, yiu will retain the flavor and some degree of heat but won't be as hit uniess we are talking ghost pepper levels. 😱🙀💀👻

How much do you have?
I like to mince one jalapeno and add it to a jar of drained olives with pimentos, and some mayo. Blend with a stick blender. Yummy spread!
