Now that Elul is almost here time to start preparing physically and spiritually for RH.

I'm going to start planning my menu.

I can't remember if only walnuts are not allowed, or all nuts
Pistachio, almond, hazelnut, pine nut etc.

Also, do you cook with garlic, pepper, lemon, just a little not much, just to elevate the flavors. If not what are your substitutes.

No walnuts, other nuts okay.

No vinegar, I use lemon juice, ask parents, depends in family's minhagim.

By DH (Lubavitch) he says "no nuts at all", but we use orange juice and grapefruit juice for acidic accents in dressings and marinades.

I also don't use garlic or onions, unless they are caramelized slowly and they turn sweet. Leeks are mild enough to use in recipes instead.

the gematria of both words is 17 - therefore most people refrain from eating nuts

although I always wondered why rosh hashana is the time people eat honey cake with almonds & taigelach with walnuts

Almonds are fine.
Some people refrain from grapes.
We eat chrein for a geshmake year.

I have the same question about pecans, dunno.
Teiglech with walnuts is for simchas Torah, AFAIK, not Rosh Hashanah.
