Need recipes for
Leek
Spinach
Pumpkin.
Must be a freezable recipe
Would like mini versions
IF POSSIIBLE NOT A MUST,low carb.
Also would prefer baked not fried
I was thinking of making kugels
Serving spinach in little squares, leek in rounds cut with a little cookie cutter.
This way I can tell the difference
And making pumpkin, spaghetti squash kugel in muffin tins.
Am I going to waste too much leek?
I can always chop up the leftover and make a little stuffing for chicken.

Am I better off making the fried patties that everyone loves
Still need a sweet squash recipe though.

We make simanim plates, arranging everything beautifully for each diner. No real cooking except for roasting or steaming where necessary.
Baby spinach leaves get a drizzle of dressing (this is silka and you can also use Swiss chard), leeks and carrots get sliced thin with a sprinkle of course salt, gourd or squash gets steamed/roasted, or server as is, or taken from the soup, black eyed peas seasoned, dates, pomegranates, apples and various new fruits just cut as served as is.
Fish gets eaten separately at the meal and we say the shehechiyanu for it then.

I've always done the patties
Just didn't want to bother with frying, because of the clean up.
Maybe I do it the day before the cleaning lady comes and leave it to her. LOL.
I guess that's what I'll end up doing, since everyone loves them (me too)
Never sure what to do with the pumpkin,
My mom use to fill the purée with raisins in fill a dough.
Way too much work for me.
Maybe I'll just bake in a glaze like glazed carrots
Any suggestion greatly appreciated.

For gourd I either do pumpkin or zucchini or squash bread, or soup, or kugel. Gourd is the easiest one
