Can somebody guide me here a little. What the difference between the 2? And why should I take one insurance over the other? Is one better than the other?

I don't know anything about healthfirst. I have had a positive experience with United Healthcare community plan.
First find out if the doctors you are seeing take both insurances. Keep in mind PCP, dentist, and any applicable specialists. And pharmacy.

Different plans are accepted by different doctors and hospitals
For example Healthfirst is widely accepted by Columbia's doctors and clinics

I currently have united health care and am very happy. There is an ob/gyn in manhattan that Im thinking of using that takes healthfirst, so my question is really if it pays to switch? My pcp takes it. Im scared to switch without hearing from peoples experience first

There's really no difference.
I chose according to which one my Drs accepted.
Call you gyn, internal, and pediatrician and ask which they accept.
