This one is so easy and delicious!
Get a couple packages of ricotta filled ravioli. Cook and drain.
Get a big lump of butter, and add in a box or two of sliced mushrooms, and a half an onion.
When the mushrooms and onions are softened and slightly browned, lower the heat and add 4 or 5 large cloves of minced garlic.
Add the ravioli back into the pan with the mushrooms, stir well. Add a few cubes of frozen basil, or chopped fresh basil. When the basil is mixed in, add some heavy cream, just enough to coat the pasta, but not enough to make it runny.
Sprinkle freshly grated parmesan cheese on top of each serving.
I like to serve this with a big green salad, and a loaf of crunchy garlic bread.
(ETA: You can make this for two people, or for 200. Just adjust the amounts, it doesn't have to be exact. If you have leftovers, reheat them in a pan on low heat, with a little bit of milk.)
