I saw a few recipes here. I am looking for something that stays juicy. so I would love to get a good recipe preferably one that isnt too sweet. just a hint of sweetness. I dont want something that is soggy. I read here of some that are doused in sauce. I want the chicken part to [u]not[/u] get dried out from the baking part but not soggy.
I dont know if I am being clear. can someone tell me if convering is the best way or not? and a good recipe? thanks so much

I place a slice of pastrami on a thin cut chicken cutlet, roll up. Roll the rolled up chicken in mayo. Dredge in cornflake crumbs. Bake uncovered at 350 for 30 minutes. Serve with a drizzle of duck sauce or sauce on the side. I don't Iike chicken over baked.
