Miriam Pascal has a pumpkin ice cream pie in Something Sweet...

Basically, you have to "dress up" store-bought vanilla ice cream, which is yucky.

I've made this with success. I don't always do mint flavor. It's a good base for any ice cream. My favorite is layering plain vanilla with a homemade strawberry sorbet.

If you live near a whole foods there is a coconut milk ice cream that is so good I kept asking DH if he bought milchigs by mistake. He did not appreciate that hehe. But seriously best pareve ice cream I have ever had its called coconut bliss.

If you want to make your own, the recipes that dont have eggs all need an ice cream maker.

Edited to say, sorry, I missed the pareve part. For non-dairy, I use coconut cream/milk. Not everyone likes coconut milk. Never tried it with other pareve milks.

Here is my favorite recipe. It does not require exact measurements.

In order, into the food processor:

1 liter of milk. Is that about 1/2 gallon?
2/3 cup of cocoa
2/3 cup of oats (or chia seeds if you're a health freak)
2/3 cup of sugar

Process well.
Freeze in two ice cream containers.

Then I do an extra step of thawing it and blending it again, which gets it creamier. Then freeze. Allow to thaw about 1/2 hour before eating.

Another version is to take 5 bananas. Process them. Add the milk. Skip the cocoa. Add the oats. Use less sugar if the bananas are really sweet. Then process well. And freeze, blend, freeze.

Now that I've shared all that, this recipe may not look super fancy unless you can run it through the processor before serving.

Oh, and like all homemade ice cream, you can add nuts or crushed cookies, after the second processing.

You've got recipes similar to this one but as you dont have this exact one I'll post it - its great!

2 containers Rich's whip
1 cup sugar
2 cups soy milk

1. Using an electric mixer, whip Rich's until creamy.
2. Add sugar and soy milk. Mix until creamy.

you can make:
Mint choc chip
Caramel Pecan
Crushed cookies
Cookie dough
Strawberry sauce
vanilla
choc chip
chocolate syrup swirls
choc and caramel swirls

the list goes on...left over brownies mixed in - ah its all great! never fail!

*after 1 hour in the freezer I always re stir the ice cream -in case the choc chips or something else have fallen to the bottom - no need for an ice cream maker ...

Enjoy!

The back of the whipped topping has a simple recipe. Basically just whip the cream with sugar and vanilla until stiff peaks form and freeze.

This one is super easy....

1 dessert whip
1 marshmallow fluff
1 bag frozen strawberries

Beat whip until stiff, add fluff and defrosted strawberries, mix. Can top with chocolate chips/sprinkles/sliced kiwi. Can freeze in pan/container or cupcake holders for easy serving.

**I'll double check the recipe later to make sure the proportions are right and edit if necessary

Not icecream, but I make strawberry shortcake for dessert and it's delicious. Basically a sponge cake, topped with whipped topping with 1/2 package of vanilla pudding mix, topped with strawberry pie filling.

Why not buy? Trader joes, soy delicious, Ben and Jerrys, and coconut bliss all make great pareve/ vegan ice creams.

Wow. This recipe looks so cool!
A liter is about 33 oz. 1/2 gallon is 64. So use a quart of milk. (I wonder if milk substitute e.g. rice, soy, almond milk would work.)
