Chicken cutlets one pan supper for 2 in oven

Do you have a recipe for chicken cutlets with a side that can be made in one pan in the oven? I make chicken with rice in one pan in the oven, but that is for chicken quarters, I don't know how to adjust time/water, and the chicken gets dried out.

Oh, and my husband doesn't like tomatoes/tomato sauce.

You can roast potato wedges on a cookie sheet in oven preheated to 400 for 30 minutes. Then add breaded thinned chicken cutlets to the pan along with green beans (obviously every thing in one layer over the sheet pan and not overlapping) and continue baking for 20 minutes.

Cover cutlets in ketchup and mayo mixture, then bread with corn flakes crumbs. Bake covered at 350 for 20 or 30 minutes and uncover until it looks good

Ketchup has tomao in it, and there is no side. Has anyone baked couscous with cutlets successfully?

Side should be a carb. I work late, idea is to have a supper that will minimize time cooking and washing dishes.

I know this is not what you asked for but maybe will be helpful and if not, sorry I don't have any better ideas:

oven baked schwarma with store bought pita as the side- can add hummus, pickles, israeli salad, etc to make it more yummy, but still good just as schwarma and pita

oven roasted fajitas with pepper and onion in store bought tortillas- can add avocado

you can freeze cooked rice, farro, quinoa etc in individual zip lock bags and then defrost and reheat and just broil/grill the chicken when you get home and that's a quick meal.

imo, white meat needs to be cooked on high heat quickly and most carbs need to be cooked at moderate/low heat for a while- so they are not going to be a great thing to cook together unless you don't mind your chicken dried out. Ra-mom's idea of cooking the potatoes before you add the chicken makes sense

You could skip the ketchup and do it with mayo and spices...the point is that the mayo keeps the chicken frm drying out... Would you do rice in a separate pan at the same time for the side?

No rice cooker, and what ratio water-rice? I know on stove it's double.

I do protein carb and veggie in one pan

Chicken strips
4 Tbs mayo
2 Tbs soy sauce
1 Tbs ketchup
1 tsp garlic powder
Mix everything together
Cut chicken cutlets into strips
Dip in mixture , sprinkle with sesame seeds.
Bake @350 for 30-45 min ( depending on how dry you want it )

I slice some potatoes - I put some frozen veggie - spray everything with Pam and spices

I'm also working and it's a breeze I prepare everything in pan night before
When I come home from work I just need to slide it into the oven
