Can I freeze either of these two sides from the mishpacha?

I want to make for sukkos the rice with crumbs and the potato/cauliflower/duck fry side dish that were in the Mishpacha supplement. The portions are large for my family size and I wanted to be a bit organized. Can I make each one into two smaller pans and freeze or am I better off making them Motzei Shab/Sunday and just keeping in the fridge? Thanks!

rice freezes well.

I have not had much success with potatoes but I also didn't see that recipe.

The dish was mashed potatoes with roasted cauliflower and then topped with crumbled duck bacon.

I made the rice and froze it for rh and it turned out fine.
However, the crumbs was a bad recipe, was way too much oil and too much oven time.

They both froze great and we really liked them. DH thought the potato dish could have used two packages of the duck fry but otherwise worked out well.

My kids have asked me to make the potato recipe for second days. What would sub well for the mayo? Margarine?

I used soy sour cream. Its what I always use in Mashed Potatoes. I also added a little almond milk and the water from the potatoes. I read an article from the Kitchn.com that more creamy fattening potatoes like butter and cream etc freeze better then plain mashed potatoes.

I liked that you had the mashed potatoes as one texture and the whole pieces of cauliflower as something else. I see lots of recipes to cut carbs by mashing the cauliflower alone or mixed with potatoes but this was a bit different.
