Those both look delicious, but DH doesn't like his chicken so sweet.
Any recipes that lean more towards savory?

You mayo instead of apricot jam, season the crumbs well, and skip the honey.
I make pastrami stuffed chicken cutlets that way.
You can make a sauce to serve alongside it if you'd like.

bumping this- does this come out moist or more on the dry side. Debating between this or dipping the cutlets into egg and French's fried onion rings. Our guests are mostly adults.

Moist if served right away. Not for rewarming.

If you want it to stay moist, I'd say to use dark meat chicken capons instead of cutlets.
