Pumpkin soup! Same way you'd make butternut squash soup.

You can use water instead of the other liquids, provided you started with a good onion garlic sauté first for lots of flavor.

Butternut squash and pumpkin are fairly interchangeable. I will say that I tried putting large slices of lightly baked (so I could peel and slice easily) squash and pumpkin under 2 different chicken batches and the pumpkin was awesome. So there are differences in taste. But you can still use your tried and true squash recipes and it should work.
Buy small pumpkins, not the large cooking ones; they're much tastier.
And don't forget to save the seeds for roasting.
