Im looking for a winner chicken burger recipe or miniature chicken pot pies, or anything that can be served as a main dish option on Yom Tov or weekday, using my cooked chicken from my chicken soup, that I can serve perhaps with a mushroom sauce.

I found this recipe here for chicken burgers but the hot mustard and other ingredients sound a bit exotic for me.

If it's already cooked, skip the chicken burgers.
Chicken pot pie is nice.

With all the Challah eaten on Yom Tov, I wanted to keep the starches to a minimum. Anything good/nice I can make without dough? Maybe just flour to thicken?

If you also have some leftover hummus, you can make this: chicken salad with hummus dressing
