Mazal tov!
אילן אילן במה אברכך
The full story is in Taanis 5b
Lots of room to talk about gratitude, brachos, different qualities of different people, what you wish to bless others etc.

If you do it on Tu Beishvat itself, there is a whole "Seder Tu Bishvat" that you can do. With all the 7 minim, and different brachot and pieces to say for each fruit.
Search for it online, I'm sure you'll find it.

well if you want to go in the way of gratitude you can decorate baskets to give to chai lifeline to distribute to sick children. the children can first decorate the baskets/ bag/boxes right a personal letter to the recipient and you can make game for them to put in as well as make those fleece pillows that that you cut the edges stuff it with stuffing and than tie them closed than decorate them with puff pens I was by a bas mitzvah party that made these baskets and the girls were so excited and rly took it to heart and did a beutiful job

Tu B'shevat Seder is a great idea. There are several variations easily available online.
Depends how many kids and how much supervision - maybe plant parsley seeds in paper cups or small flowerpots to grow for Pesach. (They might not grow enough by Pesach, but that's ok).
