I was really busy last night because my baby isn't feeling well, and I forgot to put some food in the fridge before (finally) going to sleep. It's basically a whole 9x13 aluminum pan with oven roasted vegetables; cauliflower, zucchini and Brussels sprouts. It smells fine. The temperature overnight in the kitchen is a bit colder than is comfortable, because the steam there shuts off at night, but still not very cold. Is it safe to eat?

If I knew I had flies or cockroaches in the house, it would make a huge difference to me. If I knew that there were no bugs around, I would eat it.

If it was covered then you know that no flies or bugs went into the food overnight.

Also what time did you make it at 12 am it should be fine but if it was made at 8 am then it's really 24 hours out of the fridge.

If its just roasted vegetables then I would just reheat it before serving.

Update. I decided we'll eat it since it was made late at night, and I discovered it pretty early in the morning, so it spent about 7-8 hrs on the counter, covered. I tasted a bit of every vegetable there and it tasted 100% ok. I will reheat it anyway before serving. Thanks everyone for your input!

So glad you didn't throw it out. It's vegetables not protein. Protein needs to be refrigerated, vegetables are fine at room temperature.
