We've outgrown our current living situation, and we are committed to our NY based location for the next 2-5 years minimum depending on how life plays out. We've been in our current setup for our whole marriage and rent/houses are very expensive in our neighborhood, but this neighborhood offers a lot that nearby (that's cheaper) doesn't. Financially we're "getting back on our feet"
Thus with the contingency that by the time we move again we will have the possibility having 4-5 kids ranging from 10yr child, 5 yr old child of opposite gender and "others" (to protect privacy) in that time span. What would be the "minimum" living arrangement that we should consider to not be living on top of each other as we are.

If this is your question, I would say that you need at least 3 bedrooms.
1 for the adults, take the smallest room
1 boys, if you can fit 2 twin beds, then you can fit 2 bunk beds.
1 girls, also with 2 bunk beds.
Yes, it's tight, but it can work.
IMO bathrooms are more a problem.
