ISO chicken sauce recipe with no soy or mustard

Due to allergies all my old favorite recipes don't work anymore and I'm getting bored of the ones I've been using lately.

I do not use bought/prepackaged sauces but I do have ketchup.

A drop of sweetness is OK but I am not putting a cup of sugar in anything that isn't dessert.

Chicken cacciatore with marinara or tomato sauce, tomato basil chicken, Primavera Italian chicken, Greek garlic chicken, Southern style chicken, sticky Rotisserie chicken, 40 clove balsamic chicken, spiced chicken, combination of tomato sauce and honey.

Primavera Italian chicken is chicken legs made with Italian salad dressing (store bought or homemade) with yellow and green zucchini sprinkled around along with some grape tomatoes. Comes out really yummy.
Tomato basil chicken is sundried tomatoes blended with fresh tomatoes, garlic and Italian dressing to make a yummy sauce.
You can make homemade apricot jam for your chicken by blending dried apricots with honey. Spread over well seasoned chicken.
Carmelized Silan chicken (with store bought or homemade date syrup) is delicious. Drizzle over chicken seasoned with s&p and bake uncovered until nicely browned.

chicken mirabella (with prunes and green olives) you can use less sugar

you can make a mushroom sauce with sautéed onions, wine, garlic, mushrooms and corn or potato starch

lemon caper sauce

many garlic cloves, smoked paprika, sliced onions and beer (more like gravy than sauce)

apricot jam, chipotle in adobo, lime
juice or zest and onion all puréed

Simple baked chicken
Spread sliced onions in baking pan, place chicken in, put some sliced onions on chicken, pour mixture of oil and spices on top, add whatever veggies you want around it and bake covered.

Honey chicken
Half cup of honey and olive oil, spread over chicken and bake.
Covered for an hour, uncovered for 30 -40 min.

orange chicken, tajine style chicken with moroccan spices and green olives, chicken with pesto, make a curry sauce with coconut milk and ginger, garlic and curry powder

I know you said no tomato sauce, but this one is really great.
I make a lot at one time and freeze.

Onions big dice
Peppers big dice
Tomato, diced big can
Garlic minced small
Tomato paste
Water
Salt
Pepper
Cinnamon
Sweetner of choice

Sauté a lot of onions, I use 3-4 really big onions, 2+ cups, the more the better. Until translucent, do not burn.
Add peppers, I use 2+ of each, red, yellow,orange, green.
After peppers are soft, add fresh garlic 3-4 cloves, or more if you like it.
Add 1 can of tomatoes diced, you can dice fresh.
Add tomato paste.
Let this sautée for a while.
Add 4 cups of water, mix well, cover, simmer
Simmer for a long time, maybe 45 min-1 hr.
Check and add water if needed, to desired consistency.
Add spices, to taste.

I use this sauce for many things.
Fish, chicken, ground beef (add olives and raisins)
I make a lot and freeze

If you like it spicy add some hot pepper flakes.

for bone in chicken, a hungarian paprikash.

Duck sauce with ketchup and bbq sauce or plain duck sauce.
A light coating of matzo meal on the chicken before the sauce will keep it from sliding off.

sticky chicken sauce:
1 cup mayonnaise
1 cup Jam(peach or Apricot)
1 1/4 ounces onion soup mix
2 cups hot water
or:
1/4 cups vegetable oil
1/2 cups ketchup
1/2 cups Apricot Jam
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons hot pepper sauce (optional)
1/2 lemon (juiced)
