I used fried kosher salami. Very easy and tasty. Chard or other greens like kale or collards are delicious and super healthy.
Wilted Chard with Salami Crumbs

SERVES 6
Feel free to swap out the salami for pancetta or bacon, and the chard for kale or collards. We tested with sopressata salami.
1 cup chopped Italian dried salami (about 4 ounces)
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
¼ teaspoon crushed red pepper
½ cup panko (Japanese breadcrumbs)
1¾ pounds Swiss chard, coarsely chopped
1 tablespoon sherry vinegar
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1. Sauté salami in 1 tablespoon hot oil in a large skillet over medium heat 6 to 8 minutes or until crisp. Add garlic and red pepper, and sauté 1 minute. Add panko, and cook 3 minutes or until just beginning to brown. Transfer to a bowl.
2. Heat remaining 1 tablespoon oil in skillet over medium-high heat. Add chard, and cook 4 minutes or just until wilted, stirring with tongs. Drizzle with vinegar, salt, and pepper, and transfer to a platter. Sprinkle with breadcrumb mixture.
