I have a bunch of potatoes that I want to serve for dinner. I was thinking about making a potato bar. Cook the potatoes in advance and then put out a bunch of toppings for people to choose from. So far, I thought of cheese (shredded mozarella, american) and margarine. What other toppings can you suggest?

Yum yum yum!
Sautéed mushrooms and onions (separate or mixed)
Cooked chopped broccoli
Sour cream or yogurt
Tomato sauce
Something spicy
Chopped hard boiled eggs
Butter

All the above are great suggestions. Also:
Parve "BacoBits" (fake bacon)
Chopped green onions or chives
Parve sour cream for the vegetarians/vegans
Pesto sauce
Chopped black ollives
Marinara sauce
That should do it. Any leftover toppings can be saved and used on pasta later in the week, for quick and easy lunches. Sauces can be frozen for future use. (Don't freeze sour cream, it separates and gets gross!)
A side salad will balance out the starches nicely.

PS: Thanks for the brilliant idea. DD has a group of friends with wide dietary tastes, some vegetarian, and one vegan. When they all come over, I stress about what to feed them all for dinner. This could be a life saver!

I do this for dinner sometimes. I bake potatoes in advance and sautee onions and mushrooms together and fresh spinach with garlic. I provide shredded mozzarella as well and they can help themselves to various things from the fridge or pantry.
Everyone comes up with their own combinations, tops their potatoes however they'd like, and then we put them under the broiler to melt the cheese.
One of my children particularly enjoys making pizza potatoes with tomato sauce, spices, and melted cheese.

Vegetarian chili is a must-have IMO. Salsa is also essential. On this theme, some chopped onions and guacamole would be natural accompaniments. Broccoli or cauliflower in cheese sauce would be delicious as well.
