Latkes help please

I'm very against frying and actually never made Latkes. But my husband requested it just now. Can anyone please post a fool proof recipe? Tia

8 potatoes
1 onion
4 eggs
1/3 c flour
1 tsp salt
Black pepper

Fry in lots of oil

1 egg per potato

2 eggs, wisked
Add salt & pepper
2 potatoes grated
1 tbsp flour
Mix & fry till golden

I don't.
But many pour off the liquid, and then add back in the dry starch that accumulates in the liquid to bind the latkes better.

I got this simple recipe from a professional cook:

4 potatoes
4 eggs
small piece of onion
1/4 tsp salt (but I tasted raw and added more)

heat up lots of oil in frying pan - when hot drop on latke mixture - turn to other side after a few minutes

(no flour needed - if you use the right amount of egg and sizzling oil, the latkes are firm)

this makes a large amount - you can half the recipe and get about 20 latkes from half the recipe.
