Why does it need to be a poem? Just write something from your heart, and I assure you the Morah will appreciate that you cared enough just to put it on paper.

A genuine short note (you don't need more than 2-3 sentences) is all you need. No silly rhymes.

Light the menorah, light the menorah, because it is Chanukah tonight!
Happy Chanukah Mrs D, a teacher that is a delight!
As you look at the candles, shining bright,
Think of all the girls hearts that you alight,
With your teachings, with your stories, with lessons so right,
And know that the love and the care that you display,
Goes right to the hearts of the girls each day,
And falls off their tongue when repeating the words you say.
And when my child opens her eyes in the morn’
She jumps out of bed, happy to go to school,
Where you await for her, with a smile on your face,
Greeting her, treating her, with respect and grace,
My daughter, she is happy, what a glee,
Thank you very much Mrs D for keeping her happy!
What a pleasure, what a delight,
My daughter’s heart is alight,
Because of your care, because of your way so right.

Light the menorah, light the menorah, because your lights,
Alight the hearts of the little girls tonight,
Look at your candles shining bright,
Allow the warmth to fill your heart with light,
Because that’s what you do with your lessons so right.

OP, I taught in a gan for a period of time. I don't like poetry notes nearly as much as regular notes from the heart that mention something specific that I do or have done. Then I know the parent really sees what I do and isn't such saying something because they're supposed to.

I have to agree with the other poster, as a teacher I really appreciate cards particularly the ones written from the heart even more then presents. Cards that are (I hate to say) cheesy poems tend to get thrown out but the cards written from the heart about something in particular I tend to keep...
