Instead of meatless Mondays we are trying to institute vegetarian Tuesdays. Any and all suggestions are welcome.

With regard to Indian recipes, the only specifically Indian spice we own is garam masala but we have a selection of Mediterranean spices as well. Also, I enjoy highly seasoned food but not hot/spicy foods.

Manjula's Kitchen might be a bit advanced for you, but her blog has step by step videos, so you can master techniques. All of her recipes are vegetarian, and a lot of them are vegan.

It's worth finding the extra spices. Rami brand is under the KSA heksher, and you can order them on Amazon.

Get yourself a GOOD curry powder. You can do a lot with that:

*Cook green lentils in water till till almost paste-like, with plenty of curry, ginger, and onions, to make a simple daal.
*Slice zucchini and cook in tomato juice with lots of curry powder and extra turmeric.
*Sautee onions, garlic, and fresh ginger, add sliced potatoes, cubed tofu, and chopped fresh cauliflower, a can of coconut milk, a bunch of chopped fresh tomatoes (ideally halved cherry tomatoes), salt and yup, curry powder. Cook over low heat, covered, till vegetables are tender but not falling apart. Add some lemon at the end to brighten things up.
*Sautee onions and garlic, add a can of chickpeas, finely chopped swiss chard (leaves and stem), salt, curry, and plenty of cumin. Add a bunch of chopped fresh tomatoes and cook as long as you feel like. Add a touch of lemon at the end.

Any/all of the above is awesome served over rice.

Thanks for posting this link! It wasn't for me, but I followed this page to another link for "Oh She Glows" blog and found some really interesting options there.

I ended up making a curried vegetable dal with rice. It was delicious!

Shakshuka is great. Not really Indian though. I made it tonight and spiced it with curry. Yum.

1 tbsp olive oil
1/2 medium brown or white onion, peeled and diced
1 clove garlic, minced
1 medium green or red bell pepper, chopped
4 cups ripe diced tomatoes, or 2 cans (14 oz. each) diced tomatoes
2 tbsp tomato paste
1 tsp chili powder (mild)
1 tsp cumin
1 tsp paprika
Pinch of cayenne pepper (or more to taste-- spicy!)
Pinch of sugar (optional, to taste)
Salt and pepper to taste
5-6 eggs
1/2 tbsp fresh chopped parsley (optional, for garnish)

Not Indian but vegetarian or vegan

Lentil or black bean burgers
Tofu meatballs
Falafel with all the fixings
Lentil sloppy Joe's
Mexican inspired wraps with vegetables, black beans, cheese
Vegan lasagna
Stuffed cabbage (nuts, mushrooms)
Stuffed peppers (quinoa, variety of rice, mushrooms)

I love reading the oh she glows blog but for some reason this is the only recipe I make from it!

My dh India employees wife came to my house to cook a delicious Indian food for us.

Chapati and vegetables. I don't remember the name.

Ingredients
Wheat flour
White flour
Olive oil
Kosher salt
Hot water
Spinach
Tomatoes
Black pepper
Leeks
Carrots
White mushrooms
Cumin
Turmeric

Chapati
Mix 1 cup each flour.
Add 2 tablespoons olive oil
Add 1 teaspoon salt
Add 3/4 hot water
Mix and make 10 balls
Flatten the balls thin and put each one in a very hot hot pan with a drop of olive oil.
Cook each side for 30 seconds.
Done.

Vegetables
Hot pan, 3 table spoons olive oil
Put in the salt, carrots and leeks cut thin for 5 minutes
Add a little hot water and put in the spinach and mushrooms and tomatoes, 1 teaspoon cumin, 1 teaspoon turmeric
Mix everything together and cover for 5 minutes more.

Put the chipati on the plate and put the vegetable mix and juice on top.

And fresh parsley on top if you have some.
It's so delicious!

Falafel - I make my own fresh ww pita. It's delish and actually has a pocket. 2 minutes in the pan on each side is all it needs. I serve it with lots of salads, tehini, hummus, and falafel balls (I buy them frozen).
