is there a difference if I shape dough into rugelach or buns?
When I roll it up jelly roll style and slice into buns, it comes out prettier.

It depends on the dough. Is it a yeast dough? If it's a yeast dough then it doesn't make a difference.
I used challah dough, which is a yeast dough obviously, to make rugelach, buns, and kokosh. Now I have to try babka, pizza, and breadsticks .
