I recently discovered this one and it is far and away my favorite:
http://joythebaker.com/2014/05.....kies/

Also, the dough freezes super well. Just roll into balls and place on a cookie sheet to freeze. Once they're frozen you can place into a ziplock bag or other container. Bake frozen dough (no need to thaw) @325F for ~14-16mins. It's so great to be able to bake just a couple homemade cookies whenever you want!

Is there a particular type of cookie you're looking for? These are not the most traditional type of cookies, but they're super delicious. I added mini chocolate chips to some of them:

The quinoa recipe has whole wheat and oatmeal so it isn't gluten free. (It was in teh Binah magazine a few weeks back as a breakfast cookie, way too much sugar for a breakfast cookie, but delicious as a cookie)

Do you make these milchig? Or do you substitute margarine for the butter? Does it brown like the butter?

Sorry, forgot about that issue. Yes, I do make these milchig. I doubt the margarine would brown the same way. Maybe add some sort of nut oil or extract to try and get back the nuttiness of the brown butter? Probably better off keeping this one a dairy recipe.

Binah Magazine Quinoa Cookie

1/8 c oil
2 eggs
1 cup firmly packed brown sugar
3/4 cup + 1 Tbsp maple syrup
1 tsp vanilla extract
2 cups whole wheat flour
1 tsp baking pwdr
1 tsp baking soda
2 1/2 cups quick cooking oats, uncooked
1 cup quinoa, cooked according to directions
1 cup chocolate chunk or other addin like craisins

Beat oil, eggs, brown sugar and vanilla until smooth. Add maple syrup.
combine flour, baking pwdr, baking soda, and mix (supposed to mix separately first)
Add oatmeal and cooked quinoa. Add chocolate chips or addins
Bake at 350 for 16 - 18 minutes (I do shorter for small cookies) cool before removing from pan, they are very soft at first.
