I'm looking for something that is healthy to snack on, that stays chewy, with oatmeal. Do you have a great recipe?

The recipe on the Quaker Oats box for oatmeal cookies is also my favorite. If you bake it at exact recommended time it is chewy. I make it with margarine and raisins.

I think these would fit the bill
Pulled out from inyan mag. yrs ago.

2 eggs
1 c brown sugar
1 cup oil
1 tbsp vanilla sugar
1 tsp baking soda
3 c quick oats
3/4 c oat bran (or flour instead)
3/4 flaxseed meal (or substitute wheat germ)
2tsp Cinnamon
3/4 of 10 oz chocolate bar (pareve) chopped up little squares or 1 1/4 cups chocolate chips

Preheat oven 350
Combine 1st 3 Ingredients, add dry ingredients and mix.
Using scoop, neatly spoon into balls and place on lined cookie sheet.
Bake for 18-20 minutes until cookies feel firm to the touch..
Remove from oven and allow to cool

M friend uses honey or agave instead of brown sugar. I cut down on choc chips and added little it of craizins and sunflower seeds.

These cookies are really good made with oatmeal and whole wheat - but they do have a lot of sugar - when I make them they fly...

I think the trick to Chewy cookies is to take them out of the oven when they are still very soft.

These are also very good. They have quinoa, oatmeal and whole wheat and no margarine, but again a lot of sugar.
