I love no-bake oat cookies! As long as you have something sticky (like peanut butter) to hold them together they turn out great.

These truffles are also good and very easy: http://www.joyofkosher.com/rec.....fles/

The oats are okay to eat if you don't cook or bake them?

These also contain unbaked oats and are no bake, and they are so insanely good that when I first discovered the recipe we had them every shabbos for weeks. http://chocolatecoveredkatie.c.....bars/

Pudding: Soy milk with instant pudding - voila!

Put it in a nice individual cup. You can layer vanilla and chocolate to make it look fancy.

We love peanut butter in this house. In fact, last week, my son came out covered in it right as I was about to light candles...

Thanks for the ideas!

Stacked peanut butter mousse. No bake but a little time consuming. If interested let me know.

OP, if you like peanut butter you will love this. It's basically a fudgy peanut butter and chocolate layer, with chewy peanut better oat crumbs on the top and the bottom. It is also very easy to make and pretty much foolproof.
