I'm looking for a quick and easy Israeli Salad Recipe including the dressing. Something easy to prepare with a few basic veggies, including cukes, onions and red peppers...Thanks for your help.

Israeli Salad
Spice & Spirit
2 large tomatoes
2 cucumbers
1 red or green pepper
1 scallion
2 garlic cloves, minced
1 Tbsp fresh parsley
1 tsp fresh mint, minced (optional)
1/2 tsp salt (or more to taste)
pepper, to taste
4 Tbsp oil
2-3 Tbsp lemon juice
Cut vegetables into 1/3" cubes and place in bowl. Add seasoning and mix well.
You can totally just use whatever you have at home. It's delicious any which way.

I slice up cucumbers, tomatoes, purple onion and I pickles. I season with olive oil, a bit of lemon juice, salt, pepper, cumin and dried cilantro.
