My sister in law makes an amazing brocolli kugel which everyone likes. I think she said that the recipe is in the bais Yaakov cookbook

I should have specified not broccoli. I have a great broccoli kugel recipe (from Jamie geller's joy of kosher).
Thanks though. Any other suggestions?

I've made that recipe with cauliflower instead of broccoli.

32 oz frozen spinach- defrosted and squeezed very well to get out all the water
1/2 cup mayo
1/2 cup canned coconut milk (could use soy milk instead I'm sure)
2 eggs
1 tsp garlic powder
1 tbsp minced onion
1 tbsp dried mushroom powder (optional)
1 tsp salt
Pepper
Mix all ingredients together and bake at 350 - around 30 minutes I think? Till golden brown.
