What side dishes and vegetables can I freeze?

We are going away for a Pesach and want to freeze all our food in advance to take with us. I am looking for ideas of side dishes and vegetables that I can freeze. We don't want kugels.

Buy bags of frozen veggies and bring them with you. You can steam them fresh on the hotplate or in the oven, however you'll be warming the rest of your food.
Cooked, frozen vegetable dishes aren't that great.

Vegetable dishes don't freeze well. 'Maybe you can make some marinated vegetable dishes instead that can last a while in the fridge

Things that are very "saucy" freeze well. For example, ratatouille.

Side dishes that you can freeze are potato kugel, blintzes, potato knish kugel. You can freeze mashed potatoes for a short time if you only use margarine and no liquids. You might be able to get away with freezing quinoa.
Al dente sauteed zucchini can be frozen for up to 2 weeks.
My friend once made a recipe for freezable cucumber salad.
Soups (without white potato) freeze beautifully.

Quinoa freeze beautifully.
So do most kugels.
I just made little spinach balls.
I'm planning to pour to mate sauce on them and bake in the oven.
Like meatballs, but made of spinach

Question?
Can I freeze spaghetti squash kugel?

I wouldn't. It weeps water as squash is full of water.

Duchess potatoes freeze beautifully! You would probably be able to do the same thing with sweet potatoes or another type of squash, though I've never actually tried that.
